Avocado Salad with Lime

Ingredients:
2 ½ oz mixed lettuce leaves, cleaned
2 ½ oz arugula, cleaned
4 scallions, finely chopped
5 tomatoes, sliced
2 avocados, peeled and sliced
1 oz walnuts, toasted and chopped
1 tbsp fresh lemon juice

Dressing:
1 tbsp lime juice
1 tsp mustard (ideally Dijon)
1 tbsp sour cream
1 tbsp fresh cilantro
3 tbsp extra-virgin olive oil
Pinch of sugar
Salt and pepper

Instructions:
Arrange the lettuce in a large salad bowl. Top with scallions, tomatoes and toasted walnuts.

Brush avocado slices with the lemon juice to avoid discoloration. Add to the lettuce. Toss gently.

Place all dressing ingredients into a screw-top jar and shake until well combined. Pour over lettuce, mix gently and serve immediately

Saw this today and thought I would share.

Just as you were starting to feel virtuous for having switched from sugary sodas to low- or no-calorie substitutes, a new study comes along suggesting that diet sodas might be bad for your head and your heart.

The study, which followed more than 2,500 New Yorkers for nine or more years, found that people who drank diet soda every day had a 61 percent higher risk of vascular events, including stroke and heart attack, than those who completely eschewed the diet drinks, according to researchers who presented their results today at the American Stroke Association’s International Stroke Conference in Los Angeles.

Makes you think…is diet soda really that much better?
